Salt-Responsive Pickering Emulsions Stabilized by Functionalized Cellulose Nanofibrils

Oil-in-water emulsions have been stabilized by functionalized cellulose nanofibrils bearing either a negative (oxidized nanofibrils, OCNF) or positive (cationic CCNF) surface charge. The size of the droplets was measured laser diffraction, while structure shell Pickering emulsion probed using small-angle neutron scattering (SANS), confocal scanning microscopy (CLSM), electron (SEM), and rheology measurements. Both OCNF- CCNF-stabilized present very thick (>100 nm) comprised densely packed CNF. OCNF-stabilized proved to be salt responsive, influencing droplet aggregation ultimately gel properties emulsions, CCNF on other hand, showed little salt-dependent behavior.
